French Toast with Avocado and Salsa



  • 2 tomatoes cut into small cubes
  • 1 cucumber cut into small cubes
  • 2 spring onions, finely sliced
  • Coriander
  • Squeeze of lemon juice
  • Salt flakes and freshly ground pepper to taste
  • 1/4 cup milk & 2 eggs
  • 60g Ballantyne Spreadable Lighter with Avocado Oil, melted
  • 4 slices thick cut sourdough or multigrain bread
  • 2 avocados
  • Sour cream and coriander leaves, for serving
  • Olive Oil and lemon wedge, for drizzling

French Toast with Avocado and Salsa


Step 1
Whisk together the milk, eggs and half of the melted avocado spread. Season well
Step 2
Place some of the remaining avocado spread into a frying pan
Step 3
Dip two slices of bread into egg mixture, coating well
Step 4
Drain and place into pan and cook over a medium heat for 3-4 minutes each side until golden
Step 5
Remove from pan and keep warm
Step 6
Repeat with remaining avocado spread and bread
Step 7
Dice tomato and cucumber into small cubes and add spring onion, avocado and coriander into a bowl
Step 8
Squeeze lemon juice over the top
Step 9
Serve each slice with a spoonful of salsa
Step 10
Dollop with sour cream, coriander leaves and a drizzle of olive oil and lemon. Serve immediately
Step 11
Alternatively, add some corn to the salsa
