Chia, Macadamia and Craisin Muesli Bars

Ingredients

  • 100g Ballantyne Spreadable Lighter with Chia Oil
  • 1/2 cup brown sugar
  • 2 tbsp honey
  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/3 cup craisins
  • 1/4 cup self raising flour
  • 1/4 cup pepitas
  • 1/4 tsp cinnamon
  • 1/3 cup dark chocolate buds
  • 1/3 cup macadamias
  • 1/4 cup chia seeds

Chia, Macadamia and Craisin Muesli Bars

Method

Step 1
Preheat oven to 180C (160C fan forced)
Step 2
Combine chia oil spread, sugar and honey in a small saucepan over low heat until melted
Step 3
Place remaining dry ingredients in a large mixing bowel
Step 4
Pour chia spread mixture in and mix well
Step 5
Press firmly into a lined 16 x 26cm slice tray and bake for 25 minutes, or until golden
Step 6
Allow to cool in the tray
Step 7
Place onto a chopping board and cut into muesli bar sized pieces
Step 8
Store in an air tight container
Step 9
Alternatively, substitute craisins with sultanas, dried apricots, dates, raisins or dried figs
