- 120g (½ cup) Ballantyne Cultured Unsalted Butter
- 100g (1 ⅓ cups) desiccated coconut
- 120g (1 cup heaped) plain flour, more if needed
- 120g (½ cup) sugar
- 100g (1 cup) rolled oats
- 2 tbsp honey
- 1 tsp baking soda
- 2 - 3 tbsp water

Heat the oven to 180°C (160°C fan ). Line 2 large baking trays with non-stick baking paper.
Mix together the oats, coconut, flour and sugar in a mixing bowl.
Melt the butter with the honey, bicarbonate of soda and water in a pan over a low heat.
Pour into the dry ingredients and work together to form a soft dough. Add extra water or flour if necessary.
Using a spoon, take a little of the mixture at a time and form into small balls. Gently flatten and place apart on the baking trays
Bake for about 10 minutes until golden. Cool on the trays for 5 minutes, then place on a wire rack to cool completely.
